This mesophilic culture is made in Canada by Biena, formally known as Abiasa and is an aromatic type which provides a stronger flavor than other mesophilic cultures.
This container provides eight 1/4 tsp doses, and each 1/4 tsp dose is used for 1-3 gallons of milk.
Use this culture to make soft cheeses such as Cream cheese, Sour cream, Quark, Cottage cheese, Fromage blanc, Chevre frais, St-Maure, Valencay and even cultured butter. And you can also you it for any other cheese recipes calling for mesophilic such as colby and cheddar. In fact a great way to determine which culture is best for you is to try a variety and see which flavor is your favorite.
Biena brand cultures can be used to make a mother culture to replicate what you have, making your culture last longer.
The flavors of cheeses are determined by the type of culture, timing of each phase and the temperatures called for in the recipe. Here at Homesteaders Supply, we offer a variety of cultures from three different countries... Canada, France and Italy. Trying the different brands of cultures will help you find and make your favorite cheeses!
