Making cheese many times requires a product that will mold your cheese for draining and for creating a shape and pattern. For softer cheeses, choose the open molds with a pattern. For semi-hard cheeses like Colby, choose a mold where you can press your cheese into a wheel. A semi-hard cheese does not need that much pressure and thus a mold like the Tome or Reblochon will work.
