Geotrichum Candidum is a rapidly growing surface ripening mold on soft ripened or washed rind types of cheese. Some examples of these cheeses are Camembert and Brie. This mold powder helps to produce a mottled, yet delicious white or cream colored skin. It also helps to create a hardened rind on some cheeses.
This particular item is Geotrichum 17 which produces a very mild flavor and aroma.
Use 1/16th tsp for 1 to 5 gallons of milk. Packed in a little tub containing Eight 1/16th doses.
