We tested this here at Homesteaders Supply, and it took a hot minute to get use to it, and it turned out to be heavy duty and cuts well through a very hard cheddar cheese. The way to use it is to loosen the two nuts on the ends, and you can then slide the rack up and down to determine how thick of slices you want. Then you tighten both nuts by hand, but if needed you can use a little screw driver to make sure it is tight. An extra stainless wire comes with this product, but hard to think that the wire would ever get dull.
