Description

Penicillum Candidum  provides for a white mold production on cheeses such as Brie, Camembert, Saint Maure etc .   Has the properties of enzymatic activity, aroma development and the inhibition of contaminants. 

Mediium proteolytic and Med/High Lipolytic activity.

Use 1/16th tsp for 1 to 5 gallons of milk.   Packed in a little tub containing Eight  1/16th doses.
