Tome Mold is a cheese mold used for forming and pressing, semi-hard to hard cheeses. Use any type of weight on top of the lid for pressure and in 12 - 24 hours you have a wonderful block of cheese. 8" diameter and 4" deep.

The Tome Mold can be used for making cheese like colby or cheddar, using 2-3 gallons of milk, resulting in approx a 2-3lb round wheel of cheese or less, depending on the amount of milk you start with.
If you are only using one gallon of milk, you will find using the Reblochon mold is best! In fact, keep the three pack handy for making 3 different flavored cheeses from your 3 gallon batch. Add herbs and spices for those flavors. Want some ideas? How about a Dill Colby, Garlic Chive, or a Rosemary and Thyme? Another interesting flavor is Sun-Dried Tomatoes and Basil. Or how about Roasted Red Pepper and Black Olives! The ideas are endless!
