Mesophilic II culture is made in Canada by Biena, formally known as Abiasa and is a very nice general mesophilic to create many types of cheeses.
Use this culture to many varieties of cheese from the soft cheeses like cottage cheese to Cheddar, Colby, Brick, Jack, Farmers, Limburger, Camembert, Brie, Blue cheese. You can even use this culture for butter and sour cream!
And best yet, this is the only brand of starter culture that you can make a mother culture to keep your cultures going longer.
This container provides eight 1/4 tsp doses, and each 1/4 tsp dose is used for 1-3 gallons of milk.
We often use fresh herbs from the garden to enhance the flavor of cheddar or colby... we make a hot pepper cheddar and cilantro / roasted red bell pepper colby.. BOTH ARE WONDERFUL!!!!!
