LyoPro STH is a thermophilic freeze-dried Lactic Starter Culture to make Mozzarella, Pasta Filata (stretchy) and Pizza cheese and harder cheese like Swiss style cheeses, such as Gruyere, Swiss, Jarlsberg and Emmental, just to mention a few. If you are familiar with Biena products, this one is similar to Biena Thermo C except the flavor just pops out with LyoPro cultures and the texture is so much creamier! And, these are the type of cultures that you can make a mother culture from your raw milk to keep them going for a longer time. STH is similar to STB but really great for making hard cheeses like Grana, a type of hard, mature cheese from Italy with a granular texture, often used for grating. this is why this works great from Grating or slicing cheese for topping foods make in the oven or even storing in freezer for later use.
